Canning today for food tomorrow

Well I am starting to really get into the canning groove again.  Yesterday I canned two batches of peach jam, the day before that bread and butter pickles, and today I made plum sauce and pickled green grapes.  And this is just the fun stuff honestly.  If I had a garden this year I would be canning buckets of green beans, tomato sauce, salsa, veggies, and fruits.  Sigh.... maybe next year.  With food prices rising and only going to go higher I am taking advantage of all the sales on food right now to stock up and I urge you all to do the same.  Meat is forecasted to double or triple in price!  And veggies are going up as well.

Prep and pray my friends

twirl a squirrel champ

OK so this actually had me laughing hysterically with my husband.  If you have squirels you probably know how awesome they are at raiding your bird feeders.  So companies have "squirel proof bird feeders"  one of which is a feeder that spins when the squirel lands on it.  ROTF!!!!!

Making Home Made Noodles

One of the things I have always wanted to master is making noodles.  I figure its a good skill to have just in case, and I have it under advisory that homemade noodles are a hundred times better than store bought.  But some how I never bothered making my own.

So this Christmas my mother asked what I would like. I instantly replied "A pasta maker!"  But not just any pasta maker, I wanted a non electric one.  That way if we loose power and I feel the urge to whip up a bunch of noodles I can!  You can also use the roller to make homemade crackers.

Well my mom obliged her strange daughter and I got a beautiful new hand operated pasta maker for Christmas.

Today I made chicken n' dumplings from the roast chicken we had for dinner last night and I decided to make home made egg noodles instead of using store bought.

It was an adventure and really fun.  Even eldest daughter got into the act!

It just takes flour and eggs

Roll through several times

Noodle time!

Time to eat!

These were so good.  I can't believe the difference in flavor and texture. The children asked for thirds, and while they love noodles this was a hit.  Definitely worth the trouble.

A trip to the mountians

we recently went up to a lake in the mountains to have a day of relaxation and fun.  It was cool and so beautiful.  We had a wonderful time and I don't think that there has ever been a happier kid than Viking Boy.  He was in heaven all day!  We fished and caught some nice rainbows, had roasted hot dogs, explored around the lake and streams nearby, and just enjoyed being together.

Simply Perfect Whole Wheat Bread - Best Recipe Ever!

Ever since I started my bread making journey I have been searching for that perfect bread that consistently turns out well and also can make great sandwich bread.  That is the key, sandwich bread that is not course or grainy.  But sadly much of my bread turns out grainy and although it tastes great it just cant be used for sandwiches.  I really really want to bake all our own bread.  My rolls are heavenly, my pies divine, my cookies yummy (cant take credit here I just follow the recipe)  but darn it all my bread will just not turn out for sandwiches.  I was on the point of giving up when I found a post over at one of my favorite blogs Paratus Familia.

Enola Gay is one of my mentors, she bakes all her own breads and in a wood cook stove too!  So when I read her post about a bread that turns out perfect 99% of the time and also makes great sandwich bread and also is whole wheat I knew I had to try it.

Well Enola is no liar, this bread not only was easy but it turned out perfect and sliced up beautifully for sandwiches.  It tastes divine and is whole wheat which is great because I am trying to change our family over to whole wheat breads.  I can't believe how well this turned out!

Check out her blog because it is just so fun and encouraging!

Simply Perfect Whole Wheat Bread

In a large bowl mix:

3 C warm water (110°)
2 T dry yeast
1/3 C honey

Stir in:

5 C bread flour

Let sit for 30 minutes, or until big and bubbly (sponging).

Mix in:

3 T melted butter
1/3 C honey (in addition to the honey already added)
1 T salt
2 - 4 C whole wheat flour

Knead for about 10 minutes.  The dough should be pulling away from the sides of the bowl (or counter) but still sticky to touch.

Place in a greased bowl, turning once to coat the surface of the dough.  Cover with a dishtowel.  Let rise in a warm place until double.

Punch down and divide into 3 loaves.  Place in greased 9x5 inch loaf pans and allow to rise until dough has topped the pans by one inch.

Bake at 350° for 25 to 30 minutes; do not over bake.  Lightly brush the tops of loaves with 2 tablespoons melted butter when done to prevent crust from getting hard.  Cool completely.

Settling In and pics of our new life

So everyone we moved!  Now we live in a new state (northeastern Oregon) and a totally new environment.  We moved mainly because my husband could not find a job even semi close to our home (there are no real businesses in our little town that pay well or even hire), so we had to make a decision.  We could no longer afford the massive experiences of the commute so it was move.  So Hubby started looking around at places to work.  Fortunately for us my husbands skills make it to where we could get a job just about anywhere, but most are in or near big cities which we don't like. So even though he was offered jobs in many places they just weren't right for different reasons.  Our biggest priority was going where God wanted us to go.  We prayed, our friends prayed, we asked for guidance and affirmations to make sure this was God led, and God was so faithful. When we got the offer for Hubbies new job everything just clicked, and we had so many affirmations that there was no doubt this is where we should go.  The company payed for us to move here and we are in a large town small city kind of place.  There is way more shopping than our old town, meaning two grocery stores and a dollar store and lots of restaurants! But the main draw for us was the massive amounts of outdoor recreation that is just minutes from our front door.

For those of you who don't know I have spent my whole life in the desert.  Yes Washington state has a desert, a pretty big one actually but no one ever really visits.  It's nice in its way but I have always wanted to live somewhere green and preferably in the mountains.  I love to be in the mountains and forage for berries, mushrooms, fish, hunt, and camp.  Unfortunately in every place we have lived we were hours away from any mountains for recreation.  But now we are literally at the foot of the wallowa and blue mountains.  Every morning I wake up and see snow capped peaks and every day I take my children for a long walk next to the Powder River and marvel and all the natural beauty.

Princess in Waiting and Captain Submarine on a fishing trip

We have already gone fishing and I am scoping out areas for berry picking as the most delicious wild berry grows here!  The huckleberry!  I cant wait to pick them for pies, jams, and syrups.

I have a great book on wild berries and mushrooms and I am spending my time on learning identification.

We are living in a cute little house with a nice fenced yard only three blocks from my husbands new work so no more two hour commute and all the expense that went with it.  So far I love our new town and the people we have met, I miss my garden and fruit trees and our old church family but I know God has great things in store for us here.

I'm Back

To my faithful readers I am so sorry I've been quiet of late.  We were just in the middle of a move from our old town to a new one, a new house, and a new life.  And to top it all off Viking Boy age 3 got terrible food poisoning and was sick for days and Captain Submarine also got sick at the same time with a chest ailment and fever.  To say I have been busy is an understatement.

But now my friends we are unpacked and settled and everyone is healthy again so I look forward to  posting about our adventures in our new town.  Thanks for sticking with me!

A great Titus 2 audio study

My number 1 goal as a christian is to do what God wants me to do.  God definantly has a plan for each of us but he also has instructions for women and men specifically.  One great book in the bible is Titus and specifically for women Titus 2.

Here is a audio bible study on it that is great for me.  Sometimes I listen to it every day!  It covers so much for older women and younger women and what Gods says for us.  It encourages me and reminds my of what my job is.

The Hope Chest-Preparing Daughters for Marriage

There was a time that young girls were encouraged to dream and prepare for life as an adult.  Girls made linens blankets and collected the items they would need to set up their households when they married.    Adulthood was something to look forward to not to be avoided at all costs like people today seem to feel.

But why have girls given up on the precious tradition of the hope chest?  Or more accurately why have mothers stopped teaching there daughters to prepare for marriage?  Well I think there are two reasons for it.  The main reason is the feminist movement.  That's when you see the abrupt end of the hope chest in America.  Girls were told they don't need men or children.  That being a wife and mother was tantamount to slavery and only stupid women would actually want to be a homemaker or even consider getting married.  Still with all that poisonous propaganda women and men still get married and almost all American women have children.  Even some of the most strident of the feminist movement have ended up married.  So why don't we just admit the reality here that most of our daughters are going to get married and have children?

The other reason is political correctness.  Many people don't want to seem to encourage their daughters to marriage because that would just be horrible if they didn't chose to marry or have children!  Gasp!  How horrible! How judgmental!   And we wouldn't want to teach our daughters that there are real personality traits you should avoid in a marriage partner if you would like a happy life.  Most women my age and younger have never had a real conversation with their mother or father on preparing for married life.  This is a huge problem in our country when you look at the horrifically high divorce rates in America.  Even these self congratulating politically correct people would never say that they think their own divorces were fun or that if they could change the past they would not have married the person they ended up divorcing.

.  We should be bringing back the hope chest because it encourages our daughters to think about marriage and adulthood in a logical way.  It makes them envision what they actually want marriage to be like and let me tell you I have had some amazing conversations with my eldest daughter about picking a husband and what to look for in a life partner.  I think these are the most important things I can teach my children because guess what? Your an adult most of your life and I want my children to be prepared for that.  And the person you marry will be a huge factor in your future happiness.

My eldest daughter is almost 15 and about a year ago we started preparing her hope chest.  She made a list of all the things she would need to set up a household with my guidance. These times have led to some amazing talks about marriage and adulthood.   Now every weekend when I go yardsaling she comes along, whereas before she never wanted to, and she looks for items on her list.  She is excited to find amazing deals on cookware like Pyrex and corning ware and she is looking for new linens and cooking utensils.  I told her that it would be great if she is wealthy when she sets up her own house but most likely she will be like most young people and if not exactly poor not well off either.  So she will not be able to afford to go out and buy name brand nice things from the store.  But at yard sales you can get these things in new condition for a few bucks or less!

So slowly she is building up her hope chest and talking to me about life and growing up. It reminds me of something my father often said.  I'm not raising children I'm raising future adults, so my priority is to give them the skills to be successful in life.
